Norfolk Gingers
A simple, everyday biscuit to fill up the tin
There’s something comforting about having a tin of homemade biscuits on the go. Not too fancy, just right for everyday cuppas and after-school nibbles. These Norfolk Gingers are exactly that. They’re soft and subtly spiced, with a mellow ginger warmth that’s more soothing than fiery.
Think of them as the ginger cousin of a rich tea biscuit; not too sweet, not too crisp, with an almost cakey texture that makes them perfect for little hands or dunking into a strong brew. They’re easy to make in batches and freeze beautifully (either baked or as dough balls), making them an ideal biscuit to keep in regular rotation.
This is one of those humble, dependable recipes you’ll reach for again and again.

Ingredients:
8oz plain flour
4oz brown sugar
2tsp ground ginger
1tsp mixed spice
4oz unsalted butter
1/2 tsp bicarbonate of soda
2 tablespoons milk
1 egg (beaten)
Method:
Preheat oven to 175ºc fan.
In a bowl, mix the flour, bicarb, sugar and spices together.
Rub in the butter.
Stir in the egg and milk.
Knead the mixture until smooth.
Flour your hands and divide the mixture into small, equal size balls.
Place these on a baking parchment covered baking tray.
Use a fork to flatten each ball slightly.
Bake for around 20mins.
Leave to cool on the baking tray and store in an airtight container.
